Julia Wurzer, marketing manager at Austria Juice, said the market has moved beyond niche athletic products. People now look for functional solutions that fit into daily routines. Preventive health drives much of this interest, with growing attention on gut health, fiber, and microbiome support.
Protein remains central, but formulations are evolving
Protein still leads in active nutrition, though consumers now combine it with newer ingredients like probiotics, amino acids, and functional mushrooms. Lion’s mane, for instance, appears in protein drinks, coffee, and tea. Convenience also influences product formats, with ready-to-drink beverages, smoothies, and on-the-go snacks becoming more common.

Formulating these products presents challenges. Protein-based drinks, whether from whey, soy, or pea sources, often have bitter or chalky aftertastes. Wurzer noted these sensory issues can deter buyers. To address this, Austria Juice’s flavorists create tailored solutions that hide unwanted flavors while keeping ingredient lists simple.
One method uses Flavors with Modifying Properties, which adjust sweetness and other sensory qualities without adding new components. This allows manufacturers to maintain a clean profile without sacrificing taste.
The demand for protein persists, but consumer knowledge about it varies. A conversation with FrieslandCampina Ingredients revealed that while people check labels for protein content, many don’t understand terms like “complete protein.” Some are beginning to consider protein quality and function beyond just quantity, though this awareness isn’t widespread.

Dominik Wieser, head of Procurement Ingredients at Austria Juice, said the company addresses supply chain fluctuations through the diversification of sourcing channels and long-term supplier partnerships across regions.
Yet the industry faces larger obstacles. Economic uncertainty and sustainability concerns require companies to balance innovation with affordability. For Austria Juice, this means ensuring healthy, functional products stay accessible without sacrificing quality or environmental responsibility.
The move toward everyday functionality shows how people now view nutrition. A market once limited to athletes has expanded into mainstream demand for products that support daily well-being. Companies must adapt quickly to keep pace.
